Chef Irene Yip's Yummy Peach Gum Delights

10 gWhite Fungus
25 gPeach Gum
50 gDry Logan
50 gDry Lotus
100 gGingko Nuts
1400 mlWater

300 mlWater
200 gRaw Sugar
30 gWolfberries
2 tbspOsmanthus Flowers
- Wash & soak white fungus for 2hrs until soft. Cut off the hard yellow stalk, rinse and cut into smaller pieces. Drain & set aside.
- Soak peach gum overnight, remove impurities, wash & drain.
- Place A in Instant pot, cover, select Pressure Cook, High Pressure for 5 mins. Natural Release. When ready, open the lid, add in B.
- Select Saute Mode: bring to boil. Can be served hot or cold.
- This dessert is good for complexion, improve digestion.
- Using an Instant Pot allows you to prepare it in just 15 minutes; otherwise, it requires over an hour of boiling.
