Delight in the soft and fluffy goodness of Ma Lai Gao, a classic Chinese steamed cake, conveniently prepared with your Instant Pot. This combines a delicious batter of eggs, brown sugar, and vanilla with a hint of molasses, creating a sweet and airy treat that you can have at any time of the day!

Ingredients

Brown Sugar

125 g

Cooking Oil

50 ml

milk

1 tbsp

Molasses

2 tsp

vanilla extract

175 g

All-Purpose Flour

63 g

Corn Starch

1/4 tsp

Salt

2 1/2 tsp

Baking powder

1 tsp

Baking soda

Instructions

Recipe Categories

  1. Sift the flour, corn starch, and salt in the bowl.
  2. In a separate bowl, whisk together the oil, milk, molasses and vanilla extract.
  3. In another separate bowl, beat the eggs and brown sugar until it becomes thick and reaches ribbon stage.
  4. Fold in your dry ingredients to the egg batter in small amounts at a time until your finish it all.
  5. Add some of your mixed batter to the oil mixture and whisk together so that it will have the same consistency of the batter.
  6. Add the oil batter to the main batter and fold.
  7. Rest your batter for at least an hour.
  8. Line your basket steamer or metal pan with parchment paper and pour in your batter 3/4 full.
  9. Pressure cook on high for 35 minutes and do quick release.
  10. Serve warm and enjoy!
